Ingredients:
5 lbs baby potatoes
2 cups yellow beans, cleaned and cut into bite size pieces
1 cup fresh or frozen peas
1 cup store-bought or homemade Tzatziki sauce
Fresh to dried dill
2 tbsp. coarse sea salt (More for cooking the potatoes)
2 tsp ground black pepper
½ c. thinly sliced shallots, red onions or any onion of choice
Instructions:
Cut the potatoes so that they are approximately the same size as your smallest potato, place in a large pot with a good tbsp. sea salt.
Bring to a boil and cook till not quite ready, add the yellow beans for about 4-5 minutes, then in the last minute add the peas, or blanche them in a sieve for a minute when you want. (Look at pictures)
Let everything cool down before placing in a large bowl to toss with the rest of the ingredients. Salt more or less as to what you like and want for your guests are family.
Eat lukewarm or cold, as long you eat it! And enjoy it too, I know you guests and/or family will.
