I make this all summer long, but more often when my cucumbers are in abundance in my garden. Any cucumber will do, however, if your cucumber are bitter, I have a trick below for such, To peel or not peel your cucumber is also up to you.
A pretty clean bowl or mason jar
Thinly sliced cucumbers
A pinch of dill, fresh or dried
White vinegar ( I have done it with rice vinegar and apple cider vinegar, I like them all!)
Ice
Sea salt (Or salt of choice)
This is not a measured recipe, it is a delicious want-to-eat-often recipe.
Place your cucumbers in the jar or bowl. Add 4-5, 6-8 ice cubes, depending on the amount you are making. add dill and salt. Pour the vinegar to cover the cucumber, Cover and chill for a few hours.
Use as quickly as you can, will only be delicious for a day or so.
We eat these as snacks, in sandwiches, pulled pork sandwiches, burgers etc...Try it and love it!
