You can easily make this without the topping, they are delicious on their own, with fruit or ice cream!

INGREDIENTS:

½ c. butter

6 ounces bittersweet chocolate, preferably 70 percent cacao, chopped (about 1 1/4 cups)

3/4 c. spelt flour

3/4 c. granulated sugar

3/4 c. packed light-brown sugar

1/2 c. powdered cocoa

3 large eggs, room temperature

1 tsp. vanilla

1 tsp. sea salt

Topping

2 c. sliced strawberries

1 ¼ c. chocolate chips

½ c. cream

½ tsp. vanilla

Instructions:

  1. Preheat the Stage: Start by warming your oven to 350°F (175°C). Lightly butter an 8-inch square pan and line it with parchment paper, leaving a little overhang for easy removal later—think of it as giving your brownies a cozy blanket!

  2. Chocolate Magic: In a heatproof bowl, melt the butter and chopped bittersweet chocolate over a saucepan of simmering water. Stir gently until the mixture turns velvety smooth. This step is your ticket to chocolatey bliss!

  3. Sweet Symphony: Whisk in the sugars (granulated and brown) until the mixture is glossy and combined. Add the eggs, one at a time, whisking after each addition to create a rich, fudgy base. Stir in the cocoa powder, vanilla, and a pinch of sea salt to amp up the flavors.

  4. Flour Power: Gently fold in the spelt flour until just combined. Take care not to overmix; we’re aiming for fudgy, not cakey!

  5. Bake to Perfection: Pour the batter into the prepared pan and smooth the top. Bake for about 35 minutes. Check with a toothpick—moist crumbs are what you're looking for, not a dry stick!

  6. Cool and Dress Up: Let the brownies cool completely in the pan on a wire rack. Once cooled, lift them out using the parchment handles and place them on a platter.

  7. Strawberry Bliss: Arrange a layer of fresh sliced strawberries over the cooled brownies. They add a burst of freshness and color to every bite!

  8. Ganache Glory: Heat heavy cream until it just begins to simmer, then pour it over chocolate chips. Stir until smooth and glossy, adding a touch of vanilla. Drizzle this luscious ganache over the strawberries.

  9. Chill and Serve: Refrigerate until the ganache sets. Slice into squares or serve as a whole decadent slab. Pair with a scoop of vanilla ice cream or a cup of your favorite tea for a match made in dessert heaven.

This brownie is delicious when fresh, so eat within 24 hours!
