I’ve recently been experimenting with sourdough discard, and I love the incredible texture and flavor it brings to this classic muffin recipe. Alongside my staple ingredients—ripe banana and creamy buttermilk—these cranberry muffins bake up soft and fluffy, with the kind of rich texture you’d find in a top bakery.
This muffin is so perfect for cold winter days, the tartness of the cranberries, the creaminess of the muffin batter, no need for butter really, but I am sure it is awesome with butter too!
Once you are comfortable with the base of this recipe it will also be easy to substitute the cranberries with blueberries because blueberries and orange are a great combination too. Recipe Here
I am making all these recipes because my wonderful daughter in law loves pumpkins and I love coming with recipes I know she will enjoy when she comes over. And it also gives her another recipe to make with all the pumpkins has laying around, waiting for her to make her magic with.

What better way to treat yourself to something good, what ever way to show your love of your family and friends than to offer something scrumptious and wonderful.
I loved making this simple recipe, it only takes a few minutes to prepare, assemble and place in the oven. I served it with a BBQ Chili type bean dish and it was a real hit, I then had it for breakfast with extra bacon and tomato slices, yum. I hope you enjoy it as much we did!
The sweet and savoury in this recipe is scrumptious, these are not made to be large pancakes and more like a side order than a full meal, though I think Felicity would disagree and eat only that. There is corn in this recipe, and to me, using corn in such ways is so American, and that is not a bad thing, I don’t think however that Quebecois would use it like that, we have not been raised on using corn in so many ways like our Southern neighbours do, and because I do love corn, I do use it more than more people I know.
I always have lots of bananas in the house because its a quick eat and it makes yummy bread.
I came up with this recipe in hopes of making it healthier for the kids as they scarf it down within a day, of course I am talking about my own kids but also nieces and nephews that just happen to come by when the cake has been baked. I do hope you enjoy it as much as we do!
