Place all the salad dressing ingredients for the dressing in a jar and shake well, set aside.

Dressing

½ c. olive oil

¼ c. red wine vinegar

1/4 c. lemon juice

1/3 c. rice wine vinegar

2 tsp grain mustard

1 tbsp. red onion, chopped fine

1 large clove minced garlic

1 tbsp. coarse sea salt

1 tsp. coarse black pepper

2 tsp. smoked paprika

Salad Ingredients

675 g Orzo pasta (1 ½ bags)

2 cans mixed beans

1 yellow pepper

1 red pepper

1 English cucumber

2 stalks celery

5 pepperoncini peppers (marinated)

2 containers pearl bocconcini

5-6 small marinated peppers of choice

½ cup red onions (thinly diced)

1 cup cherry tomatoes (halved)

Assemble the salad by finely chopping the ingredients.

TIP: THE ORZO PASTA IS A FINE RICE LIKE PASTA, BY CHOPPING THE VEGETABLES FINELY, YOU GET BETTER IN MOUTH TEXTURES.

Note: The amounts for everything in the salad ingredients is an approximate, and to include or not, I make my salad with what I have available, at times I will add arugula and more herbs from my garden, its all about what my fits my mood on that day, so do what feels good, and tastes good!
