Cod with Orange and Fennel

Cod with Orange and Fennel

So easy, so yummy and the orange flavors comes out beautifully!

4-5 servings 1 to 1 ½ –inch thick cod fillets

4 tbsp. orange juice

½ c. melted butter

Zest of 1 large orange

½ tsp. salt

1 tsp. fresh fennel or ½ tsp. dried dill (both are optional)

2 pinches of ground black pepper

INSTRUCTIONS:

Place your oven on broil.

Pat the fillets with a paper towel to dry and place is shallow baking pan, season with salt and pepper.

Mix the orange juice, melted butter, fennel or dill and zest in a bowl and pour half the mixture over the fish.

Place the dish with the fish in the oven and broil for 10 minutes.

Remove from oven, turn fish and pour the last of the orange and butter mixture over the fish.

Place back in the oven and broil for 10 to 12 minutes, looking for doneness by using a fork to break the fish in the center, it should come apart easily. Remove from oven and serve with the pan juices.
