INGREDIENTS:
18 to 24 Italian Tomatoes, halved
Feeding a Crowd Seasoning (FACS)
Or
1 tbsp. coarse salt
1 tsp. black pepper
1 tsp. dried oregano
1 tsp. basil
½ tsp. onion powder
½ tsp. garlic powder
1 tsp. smoked paprika
½ c. good quality olive oil or other oil of your choice
½ c. flaked or grated Parmesan
INSTRUCTIONS:
Preheat oven to 375° F.
Place halved tomatoes on parchment paper lined baking sheet. Liberally season with the season mixture of choice or in a small bowl, mix the salt, pepper, oregano, basil, onion salt, garlic powder, smoked paprika in a small bowl, use this mixture to sprinkle over the halved tomatoes.
Cook in the oven for 45 minutes.
Sprinkle the parmesan over the tomatoes and bake another 15 minutes or the cheese has melted.
Serve as a side dish or over pasta, rice, even polenta!
