Nutella Chocolate Chip Muffins with Spelt Flour
My youngest son Michael is working in Kingston, that seems so far away, what can I do as a mom to make me feel better and do something for him, he doesn’t want to take any of my food, he says he can cook his own food! I know though that a muffin is hard to resist, and so here I am on a mission to make him the best muffins I can make so he starts the day with something in his stomach.
Usually, I make them healthier, they have spelt flour also, but I like to add oats, dried or fresh fruit and use less sugar. This is a treat for sure, who doesn’t love Nutella? Guess what though, Nutella is a great baking ingredient, it adds flavor without overpowering.
I add the bananas at the very end so we can a full taste of them, like any vegetable or fruit in baking, it adds moistness and nutrition.
Beware bakers! You might end up eating more than your share!

Nutella Chocolate Chip Muffins with Spelt Flour
Makes 18 large muffins
INGREDIENTS:
¾ c. soft butter
1 c. sugar
3 eggs
1 tsp. vanilla
½ c. Nutella or equivalent
1 ½ c. Spelt flour
2 ½ c. unbleached flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
½ c. Kefir or plain yogurt
1 ¼ c. buttermilk or sour milk
2 bananas, mashed
1 c. chocolate chips
INSTRUCTIONS:
In your mixing bowl, add the butter and sugar, beat 3 minutes, add eggs and vanilla, beat another three minutes. Add Nutella and beat another 2 minutes.
In a separate bowl, mix your dry ingredients.
Measure out the Kefir and buttermilk in a measuring cup. Alternate adding your flour and liquids till your mixture is homogeneous.
Add the mashed bananas and chocolate chips. Do not overbeat, use a spatula if needed.
Fill your muffin tins to ¾ full.
Bake for 25 minutes or until the top springs back to the touch. Remove and enjoy!
