I love making pizza, it is a regular go to on Saturday nights for me, I often have pizza bars: where I make and ready the pizza dough, use pie tins for individual pizza pies and everyone makes a pizza they want, the toppings I have available are pretty yummy too, from Italian sausage to caramelized onions and different cheeses, fresh herbs etc...

Ever so often I go for something different, in this case the Philly Steak Pizza, the sauce is a common garlic white cheese sauce, sounds complicated, but it isn't, it is basic recipe you would use to make Mac n' cheese, so don't let that deter you.

Then you have the sautéed veggies that add a wonderful dimension to the pizza. I encourage you to have fun, if you are not having fun, you need a "have fun session in the kitchen" with me. ;)

INGREDIENTS:

*1 recipe pizza dough (for two large pizzas)

2 lbs. medium cooked roast beef or steak, sliced

3 tbsp. olive oil

1 tbsp. dried oregano

1 green bell pepper

1 colored bell pepper (red, yellow or orange)

2 cups sliced mushrooms

2 cups sliced onions

½ cup green onions, sliced

6 c. **grated mozzarella

Sauce:

2 c. milk

¼ c. butter

¼ c. flour

1 tsp. smoked paprika (or other)

½ tsp. ground nutmeg

½ tsp. salt

½ tsp. ground black pepper

1 c. grated parmesan

INSTRUCTIONS:

Step 1- Pizza Dough

Make Pizza dough and let rest for 1 hour or till double in size.

Step 2 – Sauce

-In medium pot, melt butter, add garlic and stir 2 minutes, add flour and spices and cook on medium for 4 minutes or till the mixture turns golden, add milk all at once and stir till thickened, about 5 minutes. (This sauce sticks and burns easily, stir often or continuously and keep an eye on it. Add cheese, stir a few minutes. Set aside.

Step 3 – Onions and mushrooms

In medium skillet, over a medium fire, add the olive oil, onions and mushrooms with the oregano, sauté for 2 minutes, add 2 pinches of salt and 1 pinch black pepper, cook for another 5 minutes. Set aside.

Step 4 – Assembly

Set oven temperature to 500° F.

Roll out your pizzas to the desired sizes. Separate the sauce in two and apply to the pizza dough. Layer the meat first, the onion and mushroom mixture next, the cheese, pepper and green onions last.

Bake for 20 to 35 minutes. Watch it carefully, ovens are temperamental things, well mine is. J

** A mixture of mozzarella and provolone is also a great mix for this pizza.

-Note

I made one with the meat and broccoli for one of my sons that doesn’t like all the yummy veggies on the first one, I must say, it was scrumptious too!
