1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup butter, room temperature
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1 egg
1 1/2 cups rolled oats
1 cup spelt flour (or unbleached flour)
1 cup dried cranberries (or golden raisins)
Instructions:
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a large bowl, using a hand mixer, wooden spoon, or stand mixer with a paddle attachment, cream together the sugars and butter until light and fluffy.
Add the baking soda, baking powder, cinnamon, nutmeg, vanilla, salt, and egg. Mix until well combined.
Stir in the oats, spelt flour, and dried cranberries, mixing just until incorporated. Do not overmix.
Drop dough by rounded teaspoonfuls onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until golden brown.
Let cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
