Pineapple Sauce for Ham and Pineapple
A recipe from my childhood days, one of the recipes my mother excelled at. Ham with pineapple slices, always served with mashed potatoes and an iceberg lettuce salad. Sometimes I make that salad just to remember those days, I would always eat a bite of the salad with a a bite of the mashed potatoes, liking the crisp cold with soft warm mashed potatoes, then the sweetness of the pineapple sauce and salty ham. This memory remains a vivid one for me.
4 c. pineapple juice (unsweetened)
1/2 c. brown sugar
2 tbsp. ketchup
2 tbsp. soy sauce
1 tsp. salt
1 tsp. ground black pepper
2 c. pineapple pieces, fresh or canned
2 tbsp. cornstarch
1/4 c. pineapple juice
INSTRUCTIONS:
In a medium sauce pan, add all the ingredients except the last two. Simmer for 15 minutes.
Stir the cornstarch into the remaining 1/4 cup pineapple juice to dissolve, add to the sauce pan and stir continuously till thickened, remove from heat and use to glaze ham and then pour the rest in a saucier to add to the table for each to use.
- This sauce is great on on meatballs for an appetizer or party food.
- This sauce is also great for a stir fry, I would simply add a bit of fresh ginger and red pepper flakes to boost the heat.
- This sauce would also work well to glaze your pineapple slices over the BBQ, simply omit the pineapple pieces at the start.
