Step 1: Boil the Ham Ingredients:
1.5 to 2 kg ham (bone-in or boneless)
1.5 liters unfiltered apple juice (preferably artisanal)
½ cup maple syrup
2 cups water
Instructions:
Place the ham in a large pot.
Add the apple juice, maple syrup, and water.
Bring to a boil, then reduce heat and simmer for 1 hour and 30 minutes, skimming as needed.
Step 2: Roast the Ham Ingredients:
¼ cup mustard of your choice
½ cup maple sugar (or brown sugar if necessary)
½ teaspoon ground cloves
Ground pepper, to taste
⅓ cup cooking liquid
2 tablespoons flour
¼ cup cold water
Instructions:
Preheat oven to 300°F (150°C).
Remove the ham from the pot and reserve the cooking liquid.
Place the ham on a baking sheet and brush with mustard.
Sprinkle evenly with maple sugar, cloves, and pepper.
Roast in the oven for 30-45 minutes, or until the glaze is golden and slightly caramelized.
Step 3: Prepare the Sauce
Place the ham on a serving platter and keep warm.
In a small bowl, whisk together the flour and cold water to form a smooth paste.
In the baking sheet, add 1 cup of the reserved cooking liquid and bring to a boil.
Whisk in the flour paste continuously until the sauce thickens and becomes smooth.
Serve the sauce hot with the ham.
