One Pot Chicken and Pasta Meal
A perfect weeknight meal, one pot, no trouble and lots of flavour.
One Pot Chicken and Pasta Meal
Serves 8 – 10
INGREDIENTS:
3 lbs. cut up boneless chicken pieces, thigh or breast
For the marinade:
1 c. buttermilk
1 tsp. herb mixture of choice (I used A Pot de Fleur Délice à la flour d'ail. But using FaCs would work. Or use 1 tsp. paprika of choice, 1/ 2 tsp. black pepper, 1 tsp. oregano and 1 tsp. garlic salt.)
* 1 tsp. smoked paprika (If using the Pot de Fleur Herb mixture)
For the Main event:
2 sticks celery
4 small carrots
1 medium sized onion
1 bell pepper
3 cloves garlic
2 tbsp. olive oil
8 c. chicken broth
2 c. water
1 tbsp. herb mixture (I used Délice à la fleur d'ail)
1 tbsp. seasoning mix (see FaCs Seasoning recipe here for what to add separately)
1 tbsp. coarse sea salt
1 tsp. ground black pepper
4 c. uncooked pasta of choice (a short pasta is best to use here, like macaroni, rotini, penne or orecchiette.
INSTRUCTIONS:
Marinate your chicken:
· Place the cut-up chicken pieces in a bowl or Ziploc bag with the buttermilk, herb mixture and smoked paprika. Marinate for as long as you can, 2 hours at the very least.
· When ready to start your recipe, drain your chicken pieces thoroughly and pat with paper towels till somewhat dry. Discard marinade.
· Pour the olive oil in a medium hot Dutch oven or heavy pot and add chicken pieces, brown the meat thoroughly.
· Dice all the vegetables the same size
· Add to the chicken in the pot and stir. Cook for 5 minutes, scraping bottom of the pot.
· Add the chicken broth, water, salt, herb mixture, seasoning and black pepper.
· Cook, covered in 350° F oven or on stove top on medium-low for 90 minutes. (If on stove top, check regularly and stir to prevent a sticky bottom.
· Remove from oven if in the oven and place on medium high heat on stove top.
· Make sure the chicken mixture is simmering, add your pasta and cook to package’s directions.
· Remove from heat and check for seasoning. (Salt and pepper)

Gluten Free: Exchange the pasta for rice or potatoes.
Note: You do not have to marinate your chicken, I do it most of the time, but not all the time.
