Creamy Polenta

Creamy Polenta by Feeding a Crowd

1 c. polenta grade corn meal

2 c. chicken broth

2 c. 15% cream

1\2 c. Parmesan

1 tsp. coarse salt

1 tsp. black pepper

1/2 c. Butter

 

In heavy pan, add the broth and cream with salt and pepper. Bring to a medium boil.

Slowly whisk in the polenta, whisking to keep clumps from forming. Continue stirring with a wooden spoon or spatula for 5 minutes or till thick and creamy.

Remove from heat and stir in butter. Add 1/4 cup parmesan and stir till homogeneous.

Pour into butter dish and sprinkle the last of the parmesan on top.

Place in oven and broil for 5 minutes, keeping an eye on it.

Let it rest a few minutes before serving.

The polenta can also be grilled on the BBQ, browned in a hot skillet.

Options: Adding chopped bacon, roasted red peppers, fresh herbs are all good options at the same time as the parmesan, also, using a different cheese works.
