  • 4 cups green, yellow, or red lentils

  • 12 cups cold water

  • 1 large ham bone with meat left on it

  • 3 bay leaves

  • 1 cup diced onions

  • 1 cup diced carrots

  • 1 cup diced celery

  • 4 vegetable or beef bouillon cubes

  • 2 tsp salt

  • 2 tsp ground black pepper

  • 1 tbsp dried mustard

  • 1 tbsp grainy mustard

  • 6 cloves

  • 2 tsp onion powder

  • 2 tsp garlic powder

Instructions:

  1. Prepare the Lentils: Place the lentils, ham bone, and bay leaves in a large pot with cold water. Bring to a boil, cover, and remove from heat. Let stand for 1 hour.

  2. Add Aromatics: Wrap the cloves loosely in cheesecloth and add to the pot. Stir in onions, celery, carrots, mustards, and seasonings.

  3. Simmer: Bring the mixture to a simmer and cook gently for 2 hours, stirring occasionally to prevent sticking.

  4. Adjust Seasonings: Taste and adjust salt, pepper, or other seasonings as needed.

  5. Serve: Remove the ham bone and bay leaves. Serve the soup piping hot with your favorite bread.
