  • 1.5 liters unfiltered apple juice (preferably artisanal)

  • ½ cup maple syrup

  • 2 cups water

  2. Add the apple juice, maple syrup, and water.

  3. Bring to a boil, then reduce heat and simmer for 1 hour and 30 minutes, skimming as needed.

Step 2: Roast the Ham Ingredients:

  • ¼ cup mustard of your choice

  • ½ cup maple sugar (or brown sugar if necessary)

  • ½ teaspoon ground cloves

  • Ground pepper, to taste

  • ⅓ cup cooking liquid

  • 2 tablespoons flour

  • ¼ cup cold water

Instructions:

  1. Preheat oven to 300°F (150°C).

  2. Remove the ham from the pot and reserve the cooking liquid.

  3. Place the ham on a baking sheet and brush with mustard.

  4. Sprinkle evenly with maple sugar, cloves, and pepper.

  5. Roast in the oven for 30-45 minutes, or until the glaze is golden and slightly caramelized.

Step 3: Prepare the Sauce

  1. Place the ham on a serving platter and keep warm.

  2. In a small bowl, whisk together the flour and cold water to form a smooth paste.

  3. In the baking sheet, add 1 cup of the reserved cooking liquid and bring to a boil.

  4. Whisk in the flour paste continuously until the sauce thickens and becomes smooth.

  5. Serve the sauce hot with the ham.
